Salty Caramel Cake (Austria)
Makes 1 (9-inch/23 cm) cake
Preparation time: 20 minutes
Cooking time: 30 minutes, plus 25 minutes cooling
Preheat the oven to 350°F/180°C/Gas Mark 4. Grease a 9-inch (23 cm) round cake pan with vegetable margarine.
Mix the flour, cocoa powder, and baking powder in a bowl. Set aside.
To make the caramel, combine the oil, maple syrup, vanilla extract, almond butter, and salt in a saucepan. Heat over medium heat, stirring constantly, for 6–7 minutes, until the caramel is bubbling and smooth.
Set aside for 10 minutes.
Mix half the almond butter mixture with the flour mixture. Add the almond milk and chocolate and stir to combine. Pour the batter into the prepared cake pan. Drizzle the remaining almond butter mixture over the top. Bake for about 25 minutes or until a skewer inserted in the center of the cake comes out clean. Set aside to cool on a wire rack for 15 minutes before serving.

This book holds a treasure of recipes. It is one of the most interestingly categorized cookbooks I have ever seen. Once you get used to it, it grows on you. If you are looking for a vegan meatlessball recipe, you won’t find it here- nor would you want to because this cookbook is loaded with the best of the best, in my opinion. Each category like: Starters is then divided into country of Origin: so Starters from Israel, South Africa, etc.; then your next category Salads then subcategories made up of recipes from each country the author has selected. Best yet, is each category is color coded on the pages edges. When I tell you this cookbook is beautiful AND functional, I do not kid. I enjoy sitting down with it and reading it like it’s a good book…it’s that good. You could call it a coffee table book because of its size, quality, and beauty (but it is so much more than that)! It measures 7” W x 11” H x 2” Thick, yes, 2” thick with recipes. It has two ribbon markers too. The cover graphics are embossed…really gift quality in every way. It doesn’t contain photos of every recipe, it’s not necessary really, and the photos that it does contain are full page and gorgeous. I could spend all next year just making recipes from this cookbook, like a test kitchen! You get what you pay for with this cookbook. LOVE IT!

I Love Meat!!
I’m not vegan, so let’s get that out of the way. Bacon cheeseburgers are delicious. I do, however, love vegetarian foods. Vegan can be tough, because…again – cheese! Balance is good, though.This cookbook is informative, and has lots of wonderful, regional recipes. I don’t mind cooking with ingredients that others may find foreign or strange. The recipes I’ve tried thus far have been delicious.I was looking for a big vegan cookbook, with tons of different styles of recipes, and I got it in this book.

Extensive Cookbook
Where to begin? This cookbook is an extensive selection of vegan recipes sorted by course type and tagged with a country of origin or influence. There’s a gorgeous photograph every 4 – 5 pages and 1 – 2 recipes on each page. The font size is small but readable. Ingredients are accessible if you live in a suburban or metro market in the United States. For example, if you want to make banana blossoms in coconut cream, the ingredient is listed as fresh or canned. You can get canned here on Amazon if they’re not available in your area.The recipes are not traditional recipes from these countries but influenced by them with ingredients. Hummus, even though it’s from the Middle East, is given a different treatment by country in this book.Many of the recipes are not something you would think to make. These are chef’s recipes and are meant to inspire you to cook something, anything. That’s where I took off a star for the small latter part of the book. Non-vegan chefs were invited to share recipes. They were given a page or two for each recipe. These recipes are over or under-whelming, either requiring too much or too little effort. It would have been better if the author/chef would have used this space to provide basics recipes (staples such as sour cream, sausage, milk, etc.) like he did with his large coffee table-sized cookbook “Vegan Cuisine”.Another small disappointment is that some countries are missing in this cookbook, such as Georgia. He could have included lobio, but, then that would have been another kind of book.

Delicious recipes to convert almost anyone with pictures to inspire
I read the review that stated this book has small print and is not good as a reference in the kitchen. I disagree. Yes, it’s somewhat small print for those of us who need reading glasses but the pictures are very inviting and it’s simply beautiful if you want to give it as a gift (as I did). Many of my friends are trying to convert to being vegan and they need inviting, tasty recipes. This book does that. If you get one of those plastic book holders, the book can be propped open and protected. The pictures will inspire you as you work in the kitchen.

The chef’s love of vegan food shines through the pages of this cute book, which contains a massive variety of healthy vegan recipes — 500 of them.As a vegan who didn’t used to put much effort into his own homecooking, it’s a joy each time I crack this book open to find a new meal idea.

If no one has the audacity to call this the Vegan Joy of Cooking, I will go ahead and do that right now. As a non-vegan who just wanted to expand my horizons since I love food and have been cooking for myself for two decades, some of that time professionally as well, this is delightfully comprehensive and packed cover-to-cover with amazing recipes.

Great book, poorly shipped
Great cook book, bought as a gift. Unfortunately it was damaged during shipment I guess, a little disappointed for the price it should be packaged a little better but overall a good vegan cook book.
