    If you buy no other Vegan Instant Pot book, buy this one. It is chock full of awesome recipes. And I’m a chef! She really knows her stuff and is so nice (you can find her on FB where she shares free recipes!)

    Richa Hingle has perfected the art of Instant Pot cooking times and flavors, making this cookbook a sure thing when it comes to cooking an easy and delicious dinner. I never make new recipes for dinner guests, but if I was going to, I’d pick one of these because I trust this cookbook!The spinach artichoke pasta was so heavenly, and the leftovers the next day heated up beautifully making it even more delightful. The creamy sauce was so delicious and decadent, yet left me feeling light after the meal and was chock full of protein and nutrients, and best of all, I only used one pot to make dinner so cleanup was a breeze.The arroz con pollo with soy curls was also out of this world – if you haven’t cooked with soy curls yet, this cookbook is an amazing place to start! They’re also an awesome plant-based protein for people who aren’t fans of beans or tofu, or just to mix things up. I find them super kid friendly, and the General Tso’s soy curls are another recipe in this book that my kids LOVE. (Any can be subbed with tofu or chickpeas if you don’t have or want to use them.)I have four different Instant Pot cookbooks and they can be hit or miss on timing sometimes, or on how well the flavors stand up to the pressure cooking. This cookbook is hands down one of the best I’ve ever used in terms of being easy, reliable, and delicious. I am a HUGE fan, and if I had one instant pot cookbook it would be this one.Richa Hingle is well known for delicious Indian cuisine and this cookbook includes some incredible options in that category while also having a range of casseroles and pasta dishes inspired by many other cuisine styles. It could not be more versatile. Highly recommend.

    Amazing!
    Vegan Richa did it again with an amazing cookbook. It is hard to top her other 2 but I love this one even more. The thought and detail that went into this book is incredible. I am vegan/gluten free and from what I’ve seen skimming through it I think all but 2 recipes are gluten free by default or have a gluten free option. That’s 148 recipes! I’ve never been able to choose from that many recipes in a book being v/gf. Almost all of them can also be soy free/nut free too. I’ve made 3 recipes so far and each one has been easy and amazing (butter chick’n, Cajun red beans, vegetable biyrani). About the first 1/3 or so of the book are Indian recipes, then sections for pastas, soups/stews, burgers, desserts, basics, and more. So much variety! Some of the recipes (especially the Indian ones) do call for some “specialty” ingredients such as cardamom pods, fenugreek, etc. I cook Indian and other cuisines calling for these ingredients often so I keep them on hand anyway but if you don’t you can easily find them on Amazon or at a specialty grocery store (it’s worth it) and I imagine you could omit what you don’t have in certain recipes. I can’t recommend this book enough! A game changer for me especially for busy weekday nights/meal prep!

    Good recipes—yields less than expected
    I’ve cooked a few recipes from this cookbook, and although they are a bit uneven, overall, they’re above average. My only complaint is that each yields less than the advertised serving size of 4 people. I suggest doubling the recipes.I’ll be trying these recipes for a while—I have so many marked!

    One of the best vegan cookbooks of all time!
    My passion in vegan whole food cooking and I have been trying recipes for 25 years. I have over 100 vegan cookbooks and try new recipes every week. Richa Hingle’s Instant Pot cookbook is outstanding and head and shoulders above 99% of the vegan books published. I have tried about 10 recipes, mostly pasta/grain/vegetable dishes and soups. The recipes are very detailed and clearly written; no guess work as to what to do. Love it that the ingredients list measurements as well as by weight, as I prefer to cook by weight. Every recipe I have tried so far has not just been good, but outstanding! As I try new recipes from her book, my husband keeps saying that her version of a recipe is the best ever, whether it be mac & cheese, mushroom soup, stroganoff, etc. Her recipes are so flavorful and the seasonings are well balanced. I typically have to adjust seasonings for recipes from other books, but this one is perfection just as it is written. I pretty much am cooking from this book exclusively these days, as I know the recipes will turn out amazing. Thank you Richa!

    Richa’s Best Cookbook Yet!!!
    I have Vegan Richa’s other cookbooks. I collect them. They’re filled with delicious recipes and beautiful photos. But I have flagged every other page of THIS book to make the recipes. I bought this book because I have an instant pot and want to use it more. Richa has many blender/IP recipes on her blog that I have made with much success and my meat-eating husband cannot get enough of them.I love her basic section where she gives you simple and easy recipes for stuff like Worcestershire (pronounced wu-stuh-sher, Richa ;)) sauce, curry powder, garam masala, cashew cream etc.All the recipes make 4 servings and have soy-, nut-, and gluten-free options. She also doesn’t use a lot of oil and I never have a problem reducing the amount or using broth instead, when I need to.I love her aloo gobi, baingan barta, wide variety of lentil and bean stews and soups, dals, etc. There are also non-South Asian dishes like scrambled eggs, pastas, meatloaf, and a nice selection of desserts, too.I can’t wait to eat my way through this book, Richa’s best yet!!

    This book is a game changer! We have Vegan Ricca‘s Everyday Indian Cookbook which we love. So when we saw this book we decided to upgrade from our slow cooker to instant pot and we are not disappointed. We’ve made 6 recipes now and all have been delicious. As with her other book it relies heavily on spices and herbs but once you have the right things your cupboard the spices get used over and over again. The recipies are all quite low calorie though so we do need to pad them out with side dishes.

    I can’t really add a lot to what others have said. I originally bought Madhuri Jeffrey’s instant pot book instead as I’ve heard of her, but the recipes were fiddly and not very nice. This book is full of recipes and they are all really easy, generally use common ingredients, and come out amazingly. In fact, despite cooking hundreds of curries in my life, they come out better here than any I’ve ever made and with a fraction of the effort. It’s also a bargain price, so just buy it and enjoy. Thank you Richa.

    Es mi libro definitivo para la Instant Pot. Seguro vale para quienes tienen otras marcas de olla eléctrica o incluso stovetop, que es la que uso más para no gastar luz. Tiene verdaderas genialidades, signo de identidad típico de la creatividad de Richa. Adoro todas las opciones de sustituciones que da para las recetas. Sin duda esto es lo mejor que tienen las recetas de Richa, las sustituciones, no tienes que andarte quebrando la cabeza para hacer las recetas sin gluten o sin soja, ella tiene la respuesta para todo. No he visto libro más gluten free friendly y soy free friendly. Incluso es nut free friendly. Y hasta tiene sugerencias para sustituir ajo y cebolla. Tiene todas las recetas que quería que vinieran. Tiene pocos postres pero los que tiene son tan buenos que es suficiente. No lo puedo superar, de verdad, me encanta. Lo amo. Es el libro que recomendaría definitivamente. A gente vegana, vegetariana, omnívora que quiere consumir más alimentos de origen vegetal. A los neófitos en cocción a presión les va a resolver la vida pero a los que ya usan mucho la olla a presión como yo, también les va a gustar.
