Delicious recipes — and most are very easy to make
As a vegetarian who’s working towards going vegan, I’m really pleased with the recipes in this book. Some of my favorites: Apple Pie Pancakes, Eggplant & Zucchini Lasagna, Creamy Red Lentil Soup, Spicy Stuffed Tomatoes, and Spaghetti Milanese. At the front of the book you’ll also find good suggestions on what items to stock up, what substitutions you can make to turn any recipe vegan, and what plant-based foods are nutrient rich. It’s the kind of book I would have liked to have written, but didn’t have to! Someone else did and I can just enjoy the tips and recipes. As promised on the cover, the recipes are quick and fairly easy to make, and they use standard ingredients (with one or two exceptions, such as chia seeds). Photos accompany most (not all) of the recipes. A really good book for someone who wants a variety of plant-based recipes but doesn’t want to spend all day in the kitchen.

A very pleasant surprise!
I got this thinking it would be just be another freebie cookbook that I had downloaded, that I would skim through and probably delete it, but it didn’t take me many pages into it to realize it was actually quite a good cookbook. I’m not vegan, or even vegetarian, I just like good food and I bookmarked several recipes to try in the near future. Most aren’t anything all that new, but she has done a little twist on them and made them hers. The table of contents is clickable and the bookmarks work. [You may think that a weird thing for me to mention, but I have had eBook cookbooks that I couldn’t bookmark.]

Easy, normal food recipes
This isn’t just a vegan cookbook, it’s a NORMAL FOOD cookbook…most vegan cookbooks go overboard on the substitutions, but in almost all of the recipes she doesn’t try to replace animal products (except for using almond milk), she just has normal food that happens to be plant based – no tempeh, no seitan, no convoluted ‘cheese’, and I think I only saw one recipe with tofu. Just actual, normal food. Very impressed.

Essential!
I am so pleased with this book. I’m more interested in revising my terrible diet to a healthy and dynamic one than I am in being vegan, but have found interesting recipes in vegan sources. I have been disabled as I recover from cancer and am therefore low income. The recipes in this book strike me immediately as delicious, quick and easy, tempting for a jaded appetite, and very economical. Right off the bat I found many things I want to try, and know would be enjoyed by non-vegetarian guests. The beginning of the book is packed with helpful hints, tips, planning etc. Truly an excellent find.

I really wanted to like this but just can’t
I really wanted to like this but just can’t. I was immediately turned off by the preachy introduction on why eating meat is evil and why we should all be vegan. I am not vegan but do try to eat meatless several times per week and am always looking for new recipes to try. I had hoped that this book would be a part of that, but even after reading it all, none of it is compelling me to actually make any of the recipes The pictures are nice and the recipes seem well organised, although they seem aimed at someone with little or no cooking skill.

The recipes are easy and mostly contain ingredients I already have in my kitchen. The best part is that the author includes nutrition information, which is absent from many cookbooks.

I loved this book. It starts by outlining the reasons why a vegan diet is good for you then it gives you a wide range of tasty easy to cook meals. These include breakfasts snacks lunches and dinners. The recipes are easy to follow and are all yummy.

Some bigger errors such as naming a recipe spicy with no spices added to the recipe, then using a picture that wouldn’t be the result of the recipe itself as the ingredients don’t look the same, see picture attachment. Overall good book, recipes that were tried were nice enough.
