Prep Time: 5 minutes // Cooking Time: 15 minutes // Serves: 6

Coated with a sweet-spicy sauce of curry and maple syrup, these just might beat your mom’s classic version as your favorite glazed carrot dish. Slice the carrots thinly so they will cook quickly, and simmer them gently with the maple syrup and curry until the sauce is reduced to a delicious glaze.

Instructions:

1. Place carrots in a large pot and cover with water. Cook on medium-high heat until tender, about 10 minutes. Drain the carrots, return to the pan, and return the pan to the heat. Reduce the heat to medium-low.

2. Stir in olive oil, curry powder, maple syrup, and lemon juice. Cook, stirring con- stantly, until liquid reduces, about 5 minutes. Season with salt and pepper and serve immediately.

    Simple, Quick & Tasty Vegan Meals!
    This has been a great addition to my cookbooks especially with my new fitness & nutrition journey. I have been taking away starchy carbs and adding more veggies. This book includes so many tasty and easy recipes that my whole family will enjoy! This is a great beginners guide to becoming Vegan or at least adding more vegetables to your diet. At the beginning of the book they go into explaining what Veganism is and the guidelines & rules for being Vegan. How to get the vitamins that you need while eating Vegan and What and What not to eat. I love how the ingredients in the recipes are very simply and can be found in your local grocery store, which is great as I don’t live in a city with the specialty sections that have a great selection. All in all a great cookbook!I received a copy of this book in exchange for an honest review.

    Negative- The book arrived absolutely filthy. I did purchase a used copy but didn’t expect it to arrive in this condition. It is also inscribed as a gift to someone on the inside cover. Glad I am planning on keeping it for myself. It surprised me but I won’t be returning it.Positive- the recipes look brand new and in very good condition. I look forward to trying some very soon.Looks like a good – now clean- book! Next time, just wipe it down before selling.

    Great Recipes and Information!
    This book was a great find! I’m not completely vegan; I’ll eat meat sometimes, but I’m not a huge fan. I knew that this book would give me some great practical ideas about implementing protein in my diet in other ways. It’s a huge plus that I found a lot of my favorite dishes in here, and more that I had never thought of, but had the ingredients for. SCORE!This book provides its readers with so many important facts to know when on a vegan diet. For example, it goes into detail about foods that people will consider as vegan, but are truly not so! You may even grimace when you hear about the source of the ingredients (human hair?? YUCK!). The book also hits on the risks of this type of diet, and how to avoid a shortage of protein in your diet that could cause depression.What was particularly useful was the sort of “grocery list” of items that you would want to keep in your refrigerator. This is always helpful, and there were very few ingredients that might make a small hassle to find (ex. Seitan, or wheat gluten flour).I appreciate the fact that the author gives helpful tips in different recipes about how to deal with specific ingredients and troubleshooting. It helped me learn more about cooking in general. I highly recommend this to all vegans, or those trying to find new sources of protein in your diet! Bon Apetite!

    What a great starting book on becoming a vegan
    What came to mind at first was, even though I am not vegan, how well I understood what a vegan is reading this book. It was so clear to me what vegan was and what was not and I would have to comfort of always looking it up. At first I didn’t know if I was going to enjoy reading the book because I got it for free but while I was reading it I can truly say that I was enjoying it. I also loved the 7 day plan on how to start to become a vegan. I would be so confused starting off and becoming a vegan but with the list in the book it would be really easy going shopping, for sure. I was amazed on how many recipes the book had and really happy with the variety that it offered,. And to almost every recipe that was an extra valuable tip on what to watch out for, loved it. The pictures that the book had made me hungry for vegan food, of course a picture for each recipe would have been the best.

    This is an absolutely outstanding cook book, unless you eat meat. I would recommend trying another book if you are not vegan.On the other hand if you like to dabble in non meat meals from time to time because you know, the environment, then this book has some outstanding, easy recipes.10/10 would eat vegan from time to time for these recipes because they slap.
