Well written with lots of recipes.
Lots of info on all kinds of different ramen recipes. I found it very helpful.

    Delish!!!
Delicious recipes. Although my wife found them a little daunting at first; once she wrapped her head around the ingredients for making a dish, it all came together. It’s great to have an authentic vegan ramen cookbook! What we’ve tried so far has turned out wonderful.

  3. Jerilyn

    Excellent
I was pleasantly surprised with the extra steps taken by Zoe Lichlyter, explaining not only ingredients but how they enhanced the flavors of the Ramen soup. Each step and why things are put into the soup in a particular order. The history of Ramen was eye opening. Thank you so much Zoe. I’m in Vancouver, WA. I’m defiantly heading over the bridge to seeking out your Portland food truck! I hope to meet you and your husband.

It was a nice introduction to Ramen.
Learnt a lot about making ramen bowls. Needed to buy a bunch of items and soup stick needs prep…but was worth it when I tasted the end result. Would reccomend it.

Excellent cook book with lots of information
I never realized how involved making authentic ramen was. This is a great book that teaches you all about the different kinds of ramen and its ingredients. I’m going to have lots of fun with it.

A Staple on My Kitchen Cookbook Shelf!! 🙌🏼
Another reviewer gave this book a bad review because it’s “not for the home cook, party of 1,” and perhaps un-suitable only for that one soul. However, for those who are passionate about ramen, utilizing broths, oils, and tare in various recipes throughout the week, this book is a true delight! It empowered me to create flavors I would have never accessed otherwise.I borrowed this book from the library before deciding to purchase it, a habit I follow with most cookbooks. This one stood out among five others, and I immediately put it to use. I had to return the library copy and purchase my own before the risk of spills became inevitable. The book is super affordable and packed with excellent reference information. On page 102, titled “Resources,” you’ll find valuable insights into buying essentials online. Additionally, there are delightful drink recipes and an amazing GYOZA recipe! The dipping sauce is so simple yet drinkable! This book would also make a fantastic gift, considering its affordability and straightforward approach, especially for anyone unfamiliar with making their own super authentic ramen.

    Vegan Ramen!
Book is a great tool for any cook. Simple to understand history, cooking tools & basic elements of ramen. Links to purchase items are a welcome addition to any cook that wants to get it right without breaking a sweat shopping. A lot of love and detail went into this book.

Great if you are feeding a lot of people and want to do a lot of prep. Too many steps. Would not recommend. Waste of money for me.

Context:I’m generally flexitarian, I eat meat and dairy still but like to eat veggie and vegan where I can, plus quite a few of my friends and family are veggie/vegan, so I wanted to cook tasty meals that everyone can enjoy without having to serve multiple dishes.I have owned this book for over 6 months as of time of writing.Summary of Book:It fantastically opens up with some history about ramen, and more importantly: a breakdown of ramen anatomy (broth, tare, oil, noodles, toppings), the sub-types, reccomended shelf-stable pantry goods, then the recipes themselves. It can seem a little daunting at first given each complete ramen recipe is composed of several smaller recipes, but once you’re able to breakdown the recipe and give yourself time to familiarise yourself with the process, it can become pretty easy to accomplish delicious ramen!I have previously used the Wagamamas book to cook ramen recipes from, and honestly this Vegan Ramen book is far better, you can easily substitute various ingredients with meat or dairy products if you wanted, especially since the book helps build ones confidence in constructing ramen to a point where you can deviate from the main recipes and start creating your own.Tip:The book will even tell you near the beginning, but in case you miss it, you can absolutely use premade stocks and ingredients for convenience, sure you will lose some complexity in flavour, but if you’re like me and occasionally forget to soak a piece of kombu seaweed in water overnight, or you feel a bit impulsive in the moment, you can use dashi granules to make some instead. I only really like to soak kombu when I have guests to cook for.Favourites:Sapporo-Style Miso Ramen, Plant-Based Tonkotsu Ramen, and Japanese-Style Curry Ramen.
