The author jumps right in to a multitude of easy and delicious-looking recipes for those who desire to help themselves and the planet by adopting or maintaining their vegan diets. The author writes: “the benefits of a vegan and gluten-free lifestyle extend beyond personal health. By embracing this way of eating, you contribute to a more sustainable and compassionate world. Plant-based diets have a lower environmental impact, requiring fewer resources and producing less greenhouse gas emissions than animal-based diets.” I am completely on board: time to make a few easy changes for health and the environment. As expected, the recipes rely heavily on fresh fruits and vegetables, as well as legumes, quinoa, nuts, and chia seeds. I was surprised by the omelet, crepes, and frittata recipes: yes, tofu is sometimes used instead of eggs here, as well as chickpea flour and quinoa; these ingredients serve as egg substitutes, offering both protein and a means for cohesion of ingredients. Abundant ideas here, including a number of smoothie choices, both green and fruit-filled. The Curried Lentil and Vegetable Stew looks like a keeper. The section on desserts is eye-popping. Lovely photos. People who are sensitive to gluten will find many wonderful ideas here, too.
