    Gluten Free and Vegan, Amazing!
    I’ve always had a couple of friends that were gluten intolerant. I made sure to keep some gluten free snacks and such in the house, and went out of the way to make gluten free dishes when I invited them over, but I was caught off guard when another friend told me she was vegan. She asked if I didn’t mind making something for her separately that wouldn’t have any meat in it, nor be cooked with the meat. I thought, “how hard could it be?” I was surprised at how difficult it was to find something that we could actually share that was gluten free and vegan. This book was a life saver. The new potatoes with herbs, grilled vegetable skewers, and baked apples provide plenty that could be shared by all. It also left plenty of other recipes to try for other meals. Thank you Vesela!

    simple & quick recipes
    First off, let me say it’s some really good recipes in this Vegan Gluten-free cookbook, I like the fact that it’s Gluten free, I can’t wait to try a lot of the recipes, but I would have liked to see a few pictures for some of the recipes, just to have an idea of what some of the food should look like

    Fantastic recipes!
    First off, I’m not vegan, but I like having different and varied vegetable and grain options and I find many of those in vegetarian and vegan cookbooks. The Spinach, Lentil, and Quinoa Stew recipe in this book is fantastic! I used packaged steamed lentils and red quinoa and I non-veganed it by using chicken stock instead of the water. Since I planned to use this as a side dish, I reduced the liquid a bit by simmering the sauteed veggies in it. I chopped the spinach, covered the pot, and turned off the heat so the spinach wilted but remained bright green. The dish was beautiful and it was delicious!

    Quick and easy
    I love the quick and easy to follow recipes because I’ve always been looking for additional vegetable recipes to have more zest in my daily menu. This book contained breakfast, lunch, dinner and even a desserts menu. At the end of the recipes, there are substitute ingredients listed in the end. Very informational. These homemade vegan gluten-free recipes are must-try!

    Not impressed with the offerings or knowledge of ingredients
    I am not a vegetarian, but was looking for a book to help me add more beans (which I have trouble taking in anything but minestrone) and vegetable-based meals to our diet, because veggies are good for everyone and it’s easy to get into a ‘same five meals’ rut. I was sadly disappointed with the offerings, however, which seemed to be mostly grain based (I have no trouble in that area), and otherwise not particularly interesting with what seemed like mostly ‘meatless versions’ of things, and bastardized ethnic foods that are never anything as good as making it right. Incidentally, it’s ‘azuki’ or at a stretch adzuki’ beans – not aduki. That alone would make me question how well an author knows their ingredients.

    Another great Vegan cook book, as meat eaters its sometimes hard to think of an all vegan recipe and how to get the flavors right but this book shows you how and makes it interesting to try.

    I love this cookbook! Though not Vegan, I follow a gluten free South Beach diet eating plan. Almost all recipes fit into the plan! If you are just beginning the SB GF plan there are a couple tweaks you will need to make, i.e., no beets, raisins, etc,l., at first. The recipes fit perfectly for any meal! If you are on any phase of SB eating plan, including maintenance, or want follow a vegan diet, I highly recommend this cookbook!
