Exactly what I was looking for
I have been vegan for just over 6 years and striving to be WFPB for 5. Before the pandemic we had been rocking the WFPB no oil kitchen no problem. Something happened after the pandemic hit. I decided apparently like eveyone else to give the sourdough starter a try and bread and bread products creeped back in big time. Not that I think they are bad, but we were eating too much, not to mention too much organic white flour. From there we have been 80% WFPB and 20% Vegan. Meaning we let a few vegan meats and cheeses into the menu as well. I think it was because I started working full time again and didn’t have as much time in the kitchen. Also I have all the WFPB big stars cookbooks, china study, Anne Esseltyn’s, Fire Engine 2, Forks Over Knives, How not to die & diet, WFPB for families, McDougal… you get the ides. I was looking for something new, something fresh. Recipes I had not tried, but would love. This book is it! The cookbook itself is a great read. The author is super credible and I love that she comes at eating this way from health, but love the other benefits as well. I also love that this is a WFPB Gluten Free, No Oil Cookbook with TONS OF GREAT TASTING FOOD! This cookbook focuses on the cooking. I will be buying a copy for my daughter in her 20’s and just getting started wanting to cook in her own kitchen. This cookbook hits the essentials, is a good teacher and doesn’t over do it in any section. I’m a fan for life of Ashley Madden’s cookbooks!** UPDATE** I am on a quest to try every recipe. I’m not a huge mushroom fan, but LOVED the Portabella Pizzas’s. Last night we tried the pink quinoa and cheezy kale. As I was cooking I was unsure, but we again sat down to an excellent meal. I had my daughter over for Sweet and Sour Stuffed Yams.. So Good. We have had several recipes multiple times. I’ve probably tried over half of the recipes and would make most of them again. The bread and bagels are excellent flavor wise and great to keep in the freezer. Toast up very nice for avocado toast or any other toast we desire. Made the lemon bliss balls, perfect snack. The carrot cake is amazing. We of course have tried & loved the bundt cake. I plan on making the cheese cake for my daughters graduation party. I feel like the cookbook was made for me!UPDATE 2: Nov 2022 – I have made all but 5 recipes! Favorites: Fiesta Burrito Bowl, Warm Harvest Salad, Balsamic Tempeh & Brussels sprouts bowl, Mint Chocolate-Caramel Chews, granola, and I could go on… muffins, breads, soups, Sunday night stew, sheet pad dinners. This is one of the best cookbooks out there.

Really lovely cookbook with very tasty recipes
I like most everything about this cookbook. I have made many of the recipes and they were all at least good and some were terrific. I especially like her blueberry oat breakfast muffins and have made them so often–not too sweet and easy to put together. The burgers are great as are the bowls. Unfortunately I am now on a no added salt, sugar, or fats diet, so I’ll have to make some substitutions–but it should be easy. I will use dates for sugar, Table Tasty for salt, and bananas, avocados, or nuts for fats–depending on what I’m whipping up. My only problem is with her use of psyllium husk so often. I am unable to get it easily and would prefer just using flax and chia.

Great Recipes, but…
Excellent recipes, but wanted to give a heads up that if you’re like me and cannot eat almonds or oats this may not be the cookbook for you because so many of the recipes include one or both. I’ve been searching for a gluten free and dairy free recipe book. This is a good one, and several of the recipes look absolutely delicious, so I’ll work on using substitutions.

Amazing Cookbook
I usually do not buy cookbooks because I can use only a few recipes. I go to the library and look at those recipes that are interesting. I did the same with this except that I couldn’t find a recipe I didn’t want! For a Gluten free, soy free vegan this is the cats meow! I loved all the information in the front, love having pictures and the notes are great. Highly recommended! Thank you Ashley!

Awesome recipes with great flavor
I have made a ton of recipes from this book and so far it’s an awesome cookbook—healthy AND delicious. I’ve gotten a lot of plant based recipe books and this is by far the one I use the most. I also use the sour cream recipe, the parms, and the baconey-bits for other things besides the recipes they’re recommended for. When others ask me for a plant based cookbook recommendation this is my go to. Flavors are fabulous! I’ve learned a lot about making really flavorful yet healthy plant-based food from this one; well worth it.

There is nothing like the visual and tactile satisfaction that a hard copy book delivers, and this one does not disappoint. From the mouth watering photography to her personal inspiration and reasons for choosing each recipe, it was hard to choose where to start! The first section of the book, from her introduction and personal story (inspirational), to the kitchen tools, cooking techniques, tricks and tips, leaves no questions you may have unanswered. If you are anything like me, what you eat has a lot to do with your mood. The arrangement of the recipes in this cookbook makes it easy to find exactly what you are “in the mood” for. You can choose something fresh and light or more savory and filling for any meal of the day. There are choices that compare to classic meals you’ve grown up with like pancakes, stews and shepherd’s pie, as well as new creations you’ll want to try, like smoothie bowls, portobello pizzas and a herbed “cheese” ball. I cannot go without mentioning the Sweets and Treats chapter in this book. The Chocolate Lover Brownies, Raw Cinnamon Rolls and Pumpkin Pie Squares are among my family’s favorites… but there are so much more! As a primary school teacher and a busy mom of two children involved in extracurricular activities, I often want and need our meals to be quick but also nutritious and full of the vitamins and nutrients that we need. Since purchasing The Plant-Based Cookbook, the one pot meals and sheet pan dinners provide my family with just that. When we do slow down (just a little) on the weekends, my daughter and I thumb through the book and make her favorite meals and “treats”. This book proves that you can eat delicious, treatworthy foods (without the guilt) and provide your body and mind with what it needs to thrive.This book is super inspirational and useful in my day to day life! Amazing health food cookbook and unrivalled oil free vegan recipes- I’ve been eating at least one recipe from this book or her blog everyday since November. Ashley is extremely innovative with her recipes, the ingredients are very accessible. Can’t stop eating the brownies- they’re amazing!
