I’m a big fan of cherry pie. I’m actually a fan of most pies but don’t like to bake, so I don’t partake very often. When I do commit to putting in that level of effort, it is almost always for cherry pie. Until, that is, I decided to become a cheater. I realized that the filling is the easy part, and by combining those delicious cherries with fillo shells from the freezer section of my grocery store, most of the work is already done!

Instructions:

1. In a large bowl, combine the cherries and brandy. Let soak for 30 minutes, stirring occasionally.

2. On your Instant Pot, select Sauté Low. When the display reads “Hot,” pour the cherries and whatever liquid is at the bottom of the bowl into the inner pot. Stir in the sugar, cornstarch, salt, and lime juice. Cook for 10 to 15 minutes, stirring frequently so nothing burns, until thickened.

3. Let cool for a few minutes before spooning the filling into the fillo shells.

INGREDIENT TIP: Frozen cherries are fine to use; thaw them completely before soaking.

PER SERVING: Calories: 288; Total fat: 3g; Saturated fat: 1g; Sodium: 74mg; Carbs: 61g; Fiber: 3g; Protein: 4g

    great book for vegans who want to focus on cookbooks that cater to both vegan & Instant Pot
    This is a fantastic book. As a vegan looking for a book with common sense info both on the Instant Pot usage, plus vegan recipes in an Instant Pot this cookbook gets a lot of use in my house. From the dedication at the beginning to a nice intro to the appliance, plus FAQs and tips, and then to the whole foods based recipes this book/cookbook is valuable to me. I love the organization in the recipes that show basics like prep & cook times, but also give the IP cooker settings and release type/times. But also really useful to me as someone who requires gluten-free, I appreciate the sub-headings on each recipe that note things like “gluten-free”, “nut-free”, etc. This makes browsing recipes much easier. But note also she indexed a full list of the gluten-recipes, which is also helpful. Overall this cookbook is a staple in my kitchen and make cooking easier. Thanks.

    First Three Recipes Tried Were a Hit – Love it!
    I have to say of the three vegan instant pot cookbooks available out there, this one so far has been a perfect success with every single recipe. There is another vegan pressure cooker cookbook on Amazon with the blue cover in hardback where I made 4 recipes and all of them got burn notices. So far from this one I made a simple tomato basil pasta which was absolutely delicious, where I added in once completed some baby spinach leaves and a splash of red wine vinegar. I did the red beans and rice which were delicious and perfect, and also the potato leek soup which was fantastic. All came out perfectly with no issues we can’t wait to try more recipes. Doesn’t matter that this book doesn’t have photos. If you are an experienced cook and understand vegan cuisine, you can get a good visual on the dish you are creating in your imagination. And let’s face it, sometimes pressure cooking doesn’t allow the most prettiest foods. The flavor, texture, nutrition that matters. highly recommended for vegans, vegetarians, or anybody looking for a healthier eating plan.

    I found several recipes I am excited to try as well as some good, basic information about using the Instant Pot. The book is well written, easy to follow and provides clear instructions as well as a recommended list of staples. I was pleased to learn that many of the recipes call for little of no oil.

    Best Vegan cookbook for beginners and pros
    I have many vegan cookbooks and recently purchased this book and another for insta pot cooking. This book is by far, not just vegan, one of the best cookbooks I own. The recipes are easy to follow and practical too. My only issue with vegan cooking, is it can be daunting with all the prep and cooking. The Complete Vegan Instant Pot Cookbook gives you great recipes to cook in the insta pot in a fraction of the time it takes to cook the same meals the conventional way. If you are new at vegan cooking, this cookbook is a must. If you’re a pro at vegan cooking, you will love the ease of the recipes. Highly recommend!

    Easy, fast prep, and delicious!
    I bought an instant pot almost a year ago, along with a cookbook, but I found both intimidating. I used my instant pot for a couple of soup recipes and lentil dishes, and that was about it. I am so glad I bought this cookbook! I have had it for a couple of weeks only, and I have already made about a dozen recipes. All have turned out very well. For lunch, I even cooked pasta in my instant pot — and it was ready in 5 minutes! As the saying goes, Do what you fear and you will stop being afraid! That certainly applies to using an instant pot. All it takes is the right cookbook!

    Almost zero pictures
    To be honest I don’t really use this cookbook and I’ve had it for 6-7 years. There are almost zero pictures which make it difficult to get excited about any particular dish. These recipes might be great, but the actual book as a tool is super disappointing mainly because the lack of photos make it 100% uninspiring. It’s a bummer because I’d love to incorporate more vegan meals for my family with the convenience of the instant pot, but the time it would take to read through every recipe, imagine the general vibe of it and decipher whether it will appeal to my family just ends up being a time waster that isn’t worth it to us. You almost have to know what you want to eat, hope it’s in the book and search for that specific thing, in which case, searching on my phone is much faster and visually pleasant.

    New Instant Pot Ideas
    So, I will admit….I am not vegan. But I was running out of new recipes to try in the Instant Pot, so I decided to try something a little different. I saw this cookbook come across, and the lasagna on the cover caught my eye. So I decided to give it a try….and I am so glad I did! Not only are these recipes easy to prepare, all of the ones I have tried are absolutely delicious!!! Additionally, I love the variety of recipes!As I have only had my Instant Pot since Christmas, I am still learning. So I love the fact that Barb spent some time explaining how the Instant Pot works!

    I finally found a vegan instant pot recipe book that has simple ingredients and all the recipes look/sound delicious. Straight forward and able to make many recipes right now – no running to the store for bislewood or corhashindom. Sure, I made up those last two ingredients – but you get the point: You have what you need at home for the most part.

    I bought this to go with the Instant Pot that I had bought for my wife, and she loves it. This isn’t a finnicky cook book with complicated creations you’ll never make in real life – there’s plenty of good simple meals that take minutes to throw together, and that you’ll love.Recommended.

    I bought this book at the same time as buying my first Instant Pot (or similar), purely because I’d always been intimidated by the concept of the latter. This book gave me the confidence & inspiration to go for it! And I’m so glad I did.It’s welcoming, practical, imaginative, well-written, and potentially life-changing!There’s way too much processed/junk food out there, and this book flies the flag for an *attainable* whole-food, plant-based diet, which is so important for optimal health, of course.On that note, highly recommend reading ‘Whole: rethinking the science of nutrition’ by Howard Jacobson and T. Colin Campbell.Anyway, thank you Barb Musick – your book is excellent! And I especially appreciated your dedication.
