Gorgeous cookbook. I’ve been watching Jenné on YouTube since 2017, but this is my first cookbook by her. I have made the chocolate pancakes and the chickpea tomato soup, really really good! What I see in this vegan cookbook vs other vegan cookbooks I own, is that she really focuses on making the food nutritious, as well as it tasting amazing. I would much rather have a bowl of tomato soup that also has squash and chickpeas in it, compared to most vegan tomato soups that just have a tomato base with some spices. I want to be full and get my protein in! I’m excited about many other recipes in this book, I’m making the tofu scramble and black bean pizza crust pizza this week!

Love it. No cashews! Air fryer options!
Im allergic to cashews which can be a real bummer as someone who cooks plant-based at home. But there are no recipes containing cashews in this book. The author does use other nuts in some recipes. I love that she gives air fryer and instant pot options for a few recipes. I’ve tried a handful of recipes so far (Brussels sprouts, tofu nuggets, orange drink from the dessert section, curry roasted pepitas, rigatoni) and they were all easy and yummy and things I would make again, maybe with some small tweaks. I have so many more bookmarked to try. This is also just a gorgeous, colorful book with photos of almost every recipe.
