Comforting meals with easy to find ingredients
I started watching this recipe creator Michaela Vais on her cooking channel. I really enjoyed watching how she made vegan cooking look easy and fun. I am not a vegan just someone who is searching for healthy recipes to make that includes lots of veggies. I liked how she prepared her recipes so decided to give her cookbook a try. I was delighted to see she had different recipes than other vegan cookbooks I own. Some of her recipes sound like they might be hard to make like vegan moussaka or mujadara but she explains everything so well even someone like me who is still learning about this type of cooking can have success in the kitchen with her easy to follow directions. I have made about 9 recipes so far and each dish was flavorful and left my stomach happy and full. The eggplant mini pizza, red lentil Dahl and zucchini fritters have been my favorite recipes so far from this cookbook. Since the book has 100 recipes it will take me some time to get to them all. There is a beautiful photo of every recipe and another photo of all the individual ingredients you will need to create the dish. The contents include sauces, breakfast, sides, salads, soups, stews, curries, main meals, snacks and desserts. There is no nutritional info included which would have been nice to have. If you are looking for a plant based cookbook that has a variety of recipes that are easy to follow then “simple and delicious vegan” would be a great cookbook to pick up and try.

Delicious, minimal ingredients, healthy, wonderful
I’ve been following Ela on her food blog, ElaVegan for years. It’s nice to finally have a cookbook from her. Yes, many recipes are on her website that she offers for free, but this is an opportunity to support this creator and all her time and creativity and effort. What makes her recipes so amazing are the straightforward and minimal ingredients. Minimal meaning: no crap or filler, just real, whole foods and spices. And she also has twists on recipes I have made for years before I used hers. For example, chocolate mousse pie made with avocados. She adds a sweet potato into this recipe which just took it to another level for me. Ela is one of the BEST vegan chefs out there and while not all of the members of my household are vegan, I am able to introduce these dishes and slowly but surely change our palates and offer plant-based alternatives to dishes we enjoy that we all feel taste better and are better for us. on a side note, Ela is also very active and dialed into her website and her social media. She’s a friendly, beautiful soul. Buy this book.

Perfect for new vegans
I recently adopted a vegan diet and was so happy to find this book. The recipes are easy to follow, especially with the pictures right next to the instruction. Love that! I’ve made a few:0 sweet potato curry, moraccan stew, hummus, meatloaf, mushroom gravy. I’ve made sweet potato curry twice now because it’s a favorite. The meatloaf was a miss by itself. But when you add the mushroom gravy, it’s really delicious. My meatloaf had no flavor, so maybe I didn’t add enough spices. IDK. I’m excited tomake all the recipes at least once.

From the very first page I knew was gonna love this book. It makes everything so easy. Finally a cookbook that is not complicated. Contains easy recipes and mostly just a few ingredients. Every page was exciting. worth every nickel.

Some Recipes in This Book Are a Little Too Simple…
I’m a huge fan of Ela Vegan after discovering her on social media. I’ve tried many of her gluten-free AND vegan recipes on her blog and on Youtube and nearly all were 5 stars. Ela has a knack for making dishes into much healthier alternatives by expertly replacing animal, gluten and refined products. And, dare I say, she is one of the very best to do it!I could not wait to get my hands on this cookbook! And, when I did, surprisingly, I was a bit disappointed.Her choosing “SIMPLE and Delicious Vegan” as the name of this book is NOT just wordplay. Quite a few recipes are a little too simple and way too common for maybe even a cookbook; i.e.: Chocolate Mug Cake, Peanut Butter Cookies, Banana Bread, Oatmeal (albiet Chocolate), Mashed Potatoes, Smashed Potatoes, Spaghetti Marinara and even a Grilled Cheese Sandwich. I expected more of the Unexpected from such an exceptional Vegan Cook for her first published cookbook.Some, if not most, of the recipes in this book are actually on her blog. That really isn’t an issue for me. (It’s actually more convenient to grab a cookbook than searching online for a recipe.) I was just underwhelmed at some of the recipe choices that made the cut. I wouldn’t grab a cookbook to make a microwave Mug Cake, Mashed or Smashed Potatoes and certainly not a Grilled Cheese Sandwich (regardless of how good it looks on the picture.) In addition, some of us novice home cooks already have go-to recipes for classics such as Spaghetti.I was hoping to see More of the Unexpected (which is where she really shines IMO) such as Chocolate Ice Cream with Sweet Potatoes as the star ingredient (YUM!!; she is quite sly with sneaking vegetables into most dishes without detection, especially delectable desserts), Vegan Cabbage Roles (Asian-inspired), Pecan Tarts, a variety of gluten-free AND vegan Pizza Crusts and other incredible recipes that aren’t as widespread, in other cookbooks, or online.What I did love about the book is the full color pictures of each recipe along with a separate picture of each of the recipe ingredients (very clever), simplicity of the instructions, and that it covers every meal category, even snacks. (I particularly favor the Soups, Stews, & Curries section.)Overall, Ela reigns supreme in the Vegan and Gluten-free community. She does a huge favor and service that shouldn’t be overlooked. I appreciate her consideration for her audience by using widely accessible ingredients, minimizing prep time of meals and even our viewing time with her YouTube videos (most are about one minute in length), and for sharing her amazing creations.As for this cookbook, the book title says it all. Though, in the future, I will look closely into any book with “Simple” in the title.

Was worth the purchase for me to be more consistent with vegan recipes – easy to follow – I have tried at least a dozen recipes and several have become my go to recipes.

Perfect cookbook for anyone following a vegan diet who is also coeliac! Delicious, easy, healthy recipes. Have made many dishes from online recipes from Ela vegan but having a book just is better!!
