Nisha Melvani appreciates that it’s hard for many people to commit to being 100% vegan. But committing to one vegan meal a day—dinner—is much more feasible. For those trying to incorporate more vegan meals into your diet, Practically Vegan is your go-to weeknight dinner cookbook and the perfect entry to veganism.

A registered dietitian nutritionist, Melvani offers solid, tested vegan recipes and a non-militant approach for those wanting to eat less meat. Plant-based cooking will no longer feel intimidating with easy-to-find ingredients that you will use in the kitchen over and over again. Inspired by the flavors she was introduced to while growing up in Jamaica, England, and Canada, as well as her own Indian heritage, Melvani shares over 100 delicious recipes, including Creamy One-Pot Cheesy Broccoli Pasta Soup, Cauliflower-Sweet Potato Curry, Sesame Noodle Veggie Stir-Fry, Mushroom Bourguignon, and more, accompanied by a foreword written by bestselling author Jonathan Safran Foer, who urged Melvani to write this cookbook after feeding his family her recipes.

With easy-to-follow directions and recipe substitutions as well as culinary tips and tricks, Practically Vegan will be the helping hand you need to prepare a vegan dinner for yourself or your family with confidence.

Beautiful book, easy to follow vegan recipes!
Easy to follow recipes, beautiful photographs, warm & personal commentary accompanying each recipe describing why it is special to Nisha and her family, or how it came about. She writes like she speaks in her shorts/reels, funny and personable. The recipes are delicious and if you don’t like an ingredient, (I hate cilantro!) she offers substitutions for each recipe.

    Practical, inventive and delicious
I bought this book when it came out and it has become a trusted source of delicious recipes, which can easily be modified to remove oils if you follow a whole foods plant based diet, without affecting the final result.I thought I would list some of my favorite recipes in the book, which I had made countless times:* Sun-Dried Tomato Hummus Pasta — this recipe is brilliant in its simplicity and such a time saver. Sometimes I use fresh tomatoes instead of sun dried tomatoes to lower the sodium content. If I have time, I make my own hummus with no oil added. I have also made this with a navy bean “hummus” to make a vegan “Alfredo” sauce.* Cheesy Tofu Scramble – this is the best tofu scramble I have eaten. I like to add half a shredded carrot and some shredded kale when cooking to add more veggies. It makes for a killer breakfast burrito.* Smashed Pinto Beans with Tahini – I am usually not a fan of pinto beans but the addition of tahini softens the taste of the pinto beans and makes it creamy. It is delicious spread on tostadas or as a base for vegan nachos.*Eggplant Parmesan Meatballs – another tasty recipe that is a little more labor intensive. It works without the addition of oil.* Artichoke Pinto Burgers – a great alternative to the usual black bean burgers. The taste is unique and the texture a little meat-like thanks to the artichokes.* Vegan Caesar Salad Dressing – this is my staple when I want to make a kale salad.* Butternut Squash Tahini Curry – another brilliant recipe where you get the consistency and flavor of Thai curry but without using any coconut milk. I add a can of chickpeas and a cubed block of tofu to add more protein.

    Nutrition info ?
Love the book, the author’s story wah gwan 🇯🇲 the layout is nicely done with great color photos. Lots of info if you’re new to vegan cooking. Great recipes. I highly recommend. The only thing missing is macros per serving for proteins carbs & fats per serving. If the author updated a new version, would even buy again. Thanks for all your hard work

  4. Heifenkekfe

    Beautifully illustrated
Lots off compelling recipes for someone who is wanting to eat more plant based and I wasn’t sure where to begin. I’ve seen lots of her cooking online and it always makes me so curious and interested to venture into being more healthy. The illustrations are very nice and the recipes look wonderful.

A must-have cookbook and not just for vegans!
I find that a real cookbook is much more inspiring to me than anything I read on the internet. I can read a recipe without having to scroll past a lot of information that may be interesting, but not when I’m in a rush to make a grocery list or get dinner on the table! This book is great – it contains many, many delicious looking recipes that are not intimidating and I’m PRETTY SURE will fool my very skeptical teenage son when faced with a new dish (I get grilled about what’s in it – is it “vegetarian … again?!”). First on my list to try is the Fire-Roasted Rigatoni allá Vodka on page 59, followed by the Mushroom Stroganoff on page 67. All the curries look amazing. The opening sections on pantry staples, cooking tools and tips and tricks make this a perfect resource for any and everyone! Very nicely done!

  6. G-Man

    Game Changer
I used to watch the Authors YouTube shorts and I liked everything she presented. Decided to purchase her book. She has amazing healthy recipes and she is a registered dietician. The sauces she shows u how to make are unbelievable. I will not buy anymore of that store crap.

  7. M. Lindsey

Easy to follow recipes and gorgeous photos!
I follow Nisha Melvani, Cooking for Peanuts on IG. In working to improve my diet, I bought this cookbook. I am not disappointed! These are the recipes I’ve been looking for. What i really love is the recipes are easy to follow and don’t keep me in the kitchen for hours. Lends well to meal preps. Any of the vegan dishes can easily sub meat.

Paperback book fell apart and the cover became unglued. I will repurchase the spiral bound.
I started reading the book and found it to be very useful in cooking WFPB. But the pages just started to fall out. I’m returning and waiting for the spiral bound to go down in price before purchasing.

I just started on a WFPB lifestyle a month ago and have been desperate to find protein sources that I actually like. I dislike beans lentils and tofu so that doesn’t leave much. I bought this book after seeing the author on #plantyou and decided to try the book. I have made 2 recipes, one with tofu and her recipe are absolutely delicious. I don’t normally lean toward Indian flavours but I am so happy I did. You won’t be disappointed in this cookbook. Nisha makes her readers feel that WFPB is a lifetime possibility. Fantastic book!

A great every day cookbook. It’s simple and easy to follow. All of the ingredients are readily available.

Have flicked through the book and the dishes look enticing. Am more familiar with Nisha’s recipes via her You Tube postings, and these have proven to be a success for my Pescatarian eater in the household.
