Why Vegan?

Cooking has been an adventure for me and it has helped me develop a special relationship with food. When we pay attention to what we eat and where it came from, it takes very little time to realize that there is a lot of animal cruelty in food than we realize. So, I have changed my eating habits to be completely animal-free. Likewise, the recipes that I share on my blog and this book reflect vegan principles. If you have not had any exposure to vegan cooking, my hope is that this book will convince you to join me and my family in fostering veganism.

Best Instant Pot Indian Vegan Cookbook!
We’ve made 6 recipes from this book and they all turned out great! Unlike other blogger cookbooks, her measurements actually work; her instructions are easy to follow and detailed so you don’t need a picture for each dish. Once you buy a spice dabba, you also don’t need to hunt down exotic spices, which makes the recipes easy, pantry food. It works well for Instant Pot cooking which we’ve had trouble with from other cookbooks and bloggers. These dishes always turn out great, delicious and healthy; really foolproof restaurant quality meals. I’ve ordered 4 or 5 “Indian Instant pot vegan” books, but Uma’s is the only one we use and we can trust it with our time and money. Portion sizes are perfect for 2 people, leaving maybe a portion for the next day’s lunch for 1. Keep up the great work and thank you Uma Ji!

    Love the layout
I love the way the author laid out which ingredients are typically included in Indian cuisine, as well as a description of them and what they add to recipes. She also includes her list of favorite kitchen tools, information on using an instant pot, helpful tips on water/grain ratios, and length of time to cook various beans and legumes. This is such a valuable resource to have readily available.I’ve been looking for a curry recipe, and may have found what I was looking for in this cookbook. I’m traveling, so haven’t been able to make anything yet, but am looking forward to trying the Mushroom Curry recipe as my first one!

Years Finally thank the gods 😆
Be Vegan for almost 16 years. I’ve tried so many recipes for authentic tasting Indian food without ghee or dairy etc. They all were not good not even close to an Indian restaurant. Well I just made my first recipe the Red Lentil Dal . It taste EXACTLY I MEAN EVEN BETTER than a good Indian restaurant. I am so grateful Uma for writing this cookbook. My husband just recently had a tumor on his appendix removed and we needed to add more whole plant based foods to his diet to keep him healthy and free from cancer. Well lentils , Indian food in general is the best way to add more plant proteins and fiber to the diet. Grateful, grateful and beyond grateful. Thank you so much !!!!!!!!!!!

Love the recipes, could use some better editing
I love the recipes, the easiness of preparing and cooking them, the full flavors and delicious results in really a fraction of the time it would take on a regular stove top, especially since you do not have to babysit the food while cooking! I made the Millet Pulao, the Panchmel Dal and the Lemon Rice and I enjoyed every single one of them. My only critique is about the editing of the book and its inconsistencies throughout. The ingredient lists are sometimes confusing: in the Millet Pulao it asks for beans: are we talking green beans or regular beans? If regular beans (as in legumes), what kind of beans? 1 Cardamom: is it 1 pod? whole? slightly crushed? Green or black? The Cumin seeds: they are listed in the ingredient list but not in the cooking steps: when am I adding them? with the whole spices at the beginning or with the rest of the ground spices in a later step? In the Lemon Rice, for example, the Water needed to cook the rice is not included in the ingredients but in the cooking steps (while it is in all other recipes I could see)… I found many example like these. It’s obviously not a deal breaker and the recipes are tasty, but better editing would make for a better overall experience. Also, nowhere I could see does it specify if the recipes are intended for a 3qt, 6qt or 8qt InstantPot. I assume they are for a 6qt because it is the most common one, but why not mention it? Since I wasn’t 100% sure and I generally do not use my InstantPot everyday (that’s what made the book even more interesting to me), I tried to look for recipes with less ingredients just in case: 2 cups of rice would not fit properly in mine …

    Fabulous Cookbook and Resource
I eat mostly vegan, love my Instapot and Indian food, but struggle with making Indian food that tastes like my favorite Indian restaurant, so I was thrilled to discover this book, which makes cooking dishes like Aloo Masala and Chana Dal quick, simple, and easy. The author has very helpful resources to help the reader understand the elements of Indian cooking such as spices. Plus, as an additional bonus the book is gorgeous. I plan to enjoy it for years to come and can’t wait to try some of the classic Indian desserts.

You have to guess om many things but when you get it right best Indian food ever.
The proof reader must have been one of her kids. One of the recipes my wife tried had sliced carrots and it said to cook on high for one minute. My wife is not familiar with the ipots yet but I am and I told het they left out the 0 so she set it for 10 minutes and it turned out great. Another recipe called for cubed potatoes and called for a 4 or 5 minute cooking time. Anyone familiar with ipots knows the potatoes will not be done. But she thought if she set it for 10 minutes it would over cook everything else so I had her steam-bag-microwave the potatoes for 3.5 minutes first. This same recipe called for many spices in the ingredients list but when you follow the instructions many of the ingredients are left out so you have to guess when to add them. The same recipe called for one bunch of spinach. “One bunch” give me a break, more guessing. With the adjustments it turned out to be one of the best Indian dishes I have ever had. This girl (the author) is a genius when it comes to blending spices but the cook times are off and many details are left out. We are adding many notes in the book. Overall I’m glad we got this book with guessing and adjustments my wife has made some of the best Indian dishes I have had, restaurants or home-cooked.

Was excited to find a vegan Indian cookbook and since it’s for the Instant Pot that’s a bonus! Would have liked to see a few more photos in the book.

I’ve just had a read through this book and I’m excited to try most of the recipes (and those that I’m not are because I have fussy children). I’ve gotten into a rut with my Instant Pot, just using it for plain staples and a handful of pasta dishes. I’m keen to broaden my horizons and fit more home made meals into my week. Anything that reduces the fridge to fork time – as I’m sure these recipes will – is most welcome!

My friend seems to like it 🙂
